Chocolate Pecan Pie Recipe

Ingredients:

  • 1 1/2 cups pecans
  • 1 cup semisweet chocolate chips
  • 1 unbaked 9-inch pie shell
  • 4 eggs, beaten
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • Caramel Sauce, for garnish, recipe follows
  • Confectioners' sugar, for garnish
Directions:

Preheat the oven to 375 degrees F.

Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.

In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake until the filling sets, 50 to 60 minutes. Remove from the oven and cool for 30 minutes before slicing. Cut into individual servings and serve with a drizzle of Caramel Sauce and sprinkle with confectioners' sugar.

Caramel Sauce:

  • 3/4 cup sugar
  • 2 tablespoons water
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup heavy cream
  • 2 tablespoons to 1/4 cup whole milk

Combine the sugar, water, and lemon juice in a medium heavy saucepan and cook over medium-high heat, stirring, until the sugar dissolves. Let boil without stirring until the mixture becomes a deep amber color, 2 to 3 minutes, watching closely so it doesn't burn. Add the cream (be careful; it will bubble up), whisk to combine, and remove from the heat.

Add 2 tablespoons of the milk, then add up to 2 more tablespoons, until the desired consistency is reached. Let cool until just warm before serving.

Sweet Potato Biscuits

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 2 heaping tablespoons sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup mashed cooked sweet potatoes
  • 1/4 cup (1/2 stick) softened butter
  • 2 to 4 tablespoons milk (depending on the moisture of the potatoes)

Directions:

Preheat the oven to 450 degrees F.

Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.

Cornbread Stuffing

Ingredients:

  • 2 hot Italian sausages
  • 2 tablespoons extra-virgin olive oil
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 1 cup chopped onion
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 bunch fresh sage, leaves chopped
  • 4 large corn muffins
  • 3 large eggs
  • 1/2 cup, chicken stock, plus more if needed
  • Nonstick cooking spray
Directions:

Heat the oven to 350 degrees F.

Remove the casings from the sausages. Heat 1 tablespoon of the olive oil in a skillet over medium-high heat and add the sausage meat. Cook, breaking up the meat into small pieces, until browned and cooked through, about 5 minutes. Drain on a paper towel lined plate and set aside to cool while you cook the vegetables. Wipe out any excess fat from the pan with paper towels.

Heat 1 tablespoon of oil in the same skillet over medium-high heat. Add the carrots, celery, and onion. Season with salt and pepper and add the sage. Cook until the vegetables are soft, about 10 minutes. Set aside to cool a bit.

Crumble the corn muffins into a large bowl. Put in the cooled sausage and vegetables. Add the eggs and 1/4 cup chicken stock. Using your hands, mix well adding more stock if the stuffing is too dry. Spray a 2-quart oven-proof baking dish with cooking spray. Put the stuffing into the dish and bake for 45 minutes to 1 hour, or until the top is browned and crispy.

Loaded Mashed Potatoes

Ingredients:

  • 2 heads garlic
  • 6 pounds Idaho potatoes, peeled and quartered
  • Salt
  • 2 teaspoons freshly ground black pepper
  • 1/2 cup butter
  • 1 (12-ounce) carton sour cream
  • 1 (8-ounce) block sharp white Cheddar, grated
  • 1 1/2 pounds cooked bacon, julienned

Directions:

Preheat oven to 350 degrees F.

Cut tops off 2 garlic heads. Wrap in foil and roast for 30 minutes. When cool enough to handle remove the flesh from the garlic heads and set aside.

In a large stockpot, cook potatoes in enough salted water to cover for 10 to 15 minutes or until tender.

Drain and return to stockpot. Beat with an electric mixer until smooth; adding salt, to taste, pepper, butter, garlic and sour cream. With a spatula stir in cheese and bacon. Add more salt and pepper, if necessary.

Green Bean Casserole Recipe

Ingredients

  • 2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
  • 1 cup milk
  • 2 teaspoons soy sauce
  • 1/4 teaspoon ground black pepper
  • 8 cups cooked cut green beans
  • 2 2/3 cups French's® French Fried Onions

Directions

Stir the soup, milk, soy sauce, black pepper, beans and 1 1/3 cups onions in a 3-quart casserole.

Bake at 350 degrees F for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.

Bake for 5 minutes or until the onions are golden brown.

Tips:

Use 2 bags (16 to 20 ounces each) frozen green beans, 4 packages (9 ounces each) frozen green beans, 4 cans (about 16 ounces each) green beans or about 3 pounds fresh green beans for this recipe.

To add crunch, add 1/2 cup sliced almonds to the onion topping.

For bacon lovers, add 4 slices bacon, cooked and crumbled, to the bean mixture.

To add a festive touch, add 1/2 cup chopped red pepper with the soup.

For cheese lovers, stir in 1 cup shredded cheddar cheese with the soup. Omit the soy sauce. Sprinkle with an additional 1/2 cup cheddar cheese when adding the remaining onions.

For Golden Green Bean Casserole, substitute Campbell's® Condensed Golden Mushroom Soup for the Cream of Mushroom Soup. Omit the soy sauce. Stir in 1/2 cup chopped red pepper with the green beans.

Sweet Potato Casserole

Ingredients:

  • 4 cups sweet potato, cubed
  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 4 tablespoons butter, softened
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1/2 cup chopped pecans
Directions:

  1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
  2. In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.
  3. In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
  4. Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

Cheesy Potatoes Recipe

Ingredients:

2 bags hash brown potatoes
1 whole onion, chopped
1 stick margarine
1 pound Velvetta cheese
1 16 oz. Package sour cream
1 can condensed cream of chicken soup
1 c. crushed corn flakes

Directions:

Spread frozen hash browns in 9x13" baking dish. Mix onions, cheese, soup and sour cream until completely mixed. Mix in potatoes. Melt margarine, mix with corn flakes and sprinkle on top. Bake at 350°F for 30 minutes.

Glazed Ham

Ingredients:

1 large whole ham
whole cloves
1 pound of brown sugar
one can of Classic Coke
burgandy wine
pineapple juice

Directions:

Preheat the oven to 400 degrees

Remove the rine from a large whole ham and score the fat in the traditional diamond pattern.

Stud it heavily with whole cloves and place it in a large roaster.

Pack One whole pound of brown sugar on to the top of the ham just as thick and as high as you cant pack it. Dont worry about the part that falls off it will be left in the pan to melt into the glaze

Put this in the 400 degree oven for thirty to forty minutes until the brown sugar begins to melt.

Then pour one can of Classic Coke over the ham very gradually trying not to wash off the melting sugar.

Reduce the oven temp to 325 degrees.

For the remaining basting you will use a mixture of half burgandy wine and half pineapple juice basteing every 30 minutes for 4 hours. Be sure to dip up the pan juices and spoon them back up over the top too. The idea is to keep the meat super moist for the whole time it is cooking.

Sweet Potato Pie

Ingredients:

  • 3 large sweet potatoes, peeled and cut into cubes
  • 1/4 cup heavy cream
  • 1 (10.75 ounce) can Campbell's® Condensed Tomato Soup
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (9 inch) unbaked pie crust
Directions:

  1. Preheat oven to 350 degrees F.
  2. Place potatoes in medium saucepan. Cover with water. Heat to a boil. Cover and cook 10 minutes over medium heat or until potatoes are tender. Drain. Place in mixer bowl. Add cream. Beat until potatoes are fluffy and almost smooth, using mixer at medium speed.
  3. Beat soup, brown sugar, eggs, vanilla, cinnamon and nutmeg. Stir into potato mixture. Spoon potato mixture into prepared crust and place on baking sheet.
  4. Bake for 1 hour or until center is almost set. Cool on wire rack to room temperature.

Thanksgiving Gravy

Ingredients:

Pan drippings from turkey
1/4 cup flour
1/4 tsp salt
1/4 tsp poultry seasoning

Pour drippings from turkey into a large glass measuring cup. Spoon off fat from drippings, reserving 3 to 4 tablespoons. Discard remaining fat. Set aside remaining drippings. Place reserved fat in medium saucepan. Stir in flour, salt and poultry seasonings. Cook over medium heat, stirring constantly until smooth and bubbly, about 1 minute. If necessary, add water to reserved turkey drippings to measure 2 1/2 cups. Gradually stir mixture to boiling, stirring frequently. Boil until thickened, 5-7 minutes.

Makes about 2 cups

Pumpkin Bread

Ingredients:

  • 3 cups canned pumpkin puree
  • 1 1/2 cups vegetable oil
  • 4 cups white sugar
  • 6 eggs
  • 4 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1 1/2 teaspoons ground cloves
Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
  2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
  3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

Glazed Sweet Potatoes

Ingredients:

  • 4 tablespoons butter, plus 1 tablespoon for greasing
  • 4 medium yams or sweet potatoes, peeled
  • 1/2 cup brown sugar
  • 3 tablespoons maple syrup
  • Freshly grated nutmeg, to taste
Directions:

Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.

Cut each of the yams into 8 evenly shaped wedges. Lay them out in the prepared baking dish in an even layer. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and allow to dissolve. Mix in syrup and cook until smooth. Pour the glaze over the yams and sprinkle with nutmeg.

Cover the baking dish with foil and bake for about 45 minutes or until the yams are tender when pierced with a fork but they still hold their shape.

Cranberry Salad

Ingredients:

1 lb. cranberries
1 c. sugar
1 lb. miniature marshmallows
1 can drained, crushed pineapple
2 c. cream, whipped
1/2 c. chopped nuts

Grind cranberries, add sugar. Mix well and let sit for 1/2 hour. Add the rest of the ingredients. Mix well, keep in refrigerator.

Perfect Pumpkin Pie

Ingredients:

  • 1 cup pumpkin pureĆ©, canned or fresh cooked
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 3 eggs, slightly beaten
  • 1 cup half-and-half
  • 1 9-inch pastry shell, unbaked

Directions:

Combine pumpkin, sugar, salt, and spices. Add beaten eggs and half-and-half. Blend well. Pour pumpkin mixture into prepared pie shell. BAke at 450° for 10 minutes. Reduce heat to 325°; bake 45 minutes longer, or until a knife inserted in center comes out clean.

Homestyle Apple Pie

Ingredients:

For the crust:

  • 6 ounces unsalted butter, cut into 1/2-inch pieces
  • 2 ounces vegetable shortening, cut into 1/2-inch pieces
  • 5 to 7 tablespoons applejack
  • 12 ounces all-purpose flour, approximately 2 3/4 cups, plus extra for dusting
  • 1 teaspoon table salt
  • 1 tablespoon granulated sugar

For the filling:

  • 3 to 3 1/2 pounds apples, mixture of Granny Smith, Honeycrisp, Braeburn and Golden Delicious, about 6 large apples
  • 1/2 cup sugar, divided
  • 3 tablespoons tapioca flour
  • 2 tablespoons apple jelly
  • 1 tablespoon apple cider
  • 2 teaspoons freshly squeezed lime juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground grains of paradise

Directions:

For the crust:

Place the butter, shortening and applejack into the refrigerator for 1 hour.

In the bowl of a food processor, combine the flour, salt and sugar by pulsing 3 to 4 times. Add the butter and pulse 5 to 6 times until the texture looks mealy. Add the shortening and pulse another 3 to 4 times until incorporated.

Remove the lid of the food processor and sprinkle in 5 tablespoons of the applejack. Replace the lid and pulse 5 times. Add more applejack as needed, and pulse again until the mixture holds together when squeezed. Weigh the dough and divide in half. Shape each half into a disk, wrap in plastic wrap and refrigerate for at least 1 hour and up to overnight.

For the filling:

Peel and core the apples. Slice into 1/2-inch thick wedges. Toss all of the apples with 1/4 cup of the sugar, place in a colander set over a large bowl and allow to drain for 1 1/2 hours.

Transfer the drained liquid to a small saucepan, place over medium heat and reduce to 2 tablespoons. Set aside to cool. Toss the apples with the remaining sugar, tapioca flour, jelly, cider, lime juice, salt and grains of paradise.

For assembling and baking the pie:

Preheat oven to 425 degrees F.

Remove one disk of dough from the refrigerator. Place the dough onto a lightly floured piece of waxed paper. Lightly sprinkle the top of the dough with flour and roll out into a 12-inch circle. Place into a 9 1/2 to 10-inch tart pan that is 2-inches deep. Gently press the dough into the sides of the pan, crimping and trimming the edges as necessary. Set a pie bird in the center of the bottom of the pan.

Place the apples into the unbaked pie shell in concentric circles starting around the edges, working towards the center and forming a slight mound in the center of the pie. Pour over any liquid that remains in the bowl. Roll out the second pie dough as the first. Place this dough over the apples, pressing the pie bird through the top crust.

Press together the edges of the dough around the rim of the pie. Brush the top crust with the reduced juice everywhere except around the edge of pie. Trim any excess dough. Place the pie on a half sheet pan lined with parchment paper and bake on the floor of the oven for 30 minutes. Transfer to the lower rack of the oven and continue to bake another 20 minutes or until the apples are cooked through but not mushy. Remove to a rack and cool a minimum of 4 hours or until almost room temperature.


Homestyle Turkey

Ingredients:

  • 1 (12 pound) whole turkey
  • 6 tablespoons butter, divided
  • 4 cups warm water
  • 3 tablespoons chicken bouillon
  • 2 tablespoons dried parsley
  • 2 tablespoons dried minced onion
  • 2 tablespoons seasoning salt
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Rinse and wash turkey. Discard the giblets, or add to pan if they are anyone's favorites.
  2. Place turkey in a Dutch oven or roasting pan. Separate the skin over the breast to make little pockets. Put 3 tablespoons of the butter on both sides between the skin and breast meat. This makes for very juicy breast meat.
  3. In a medium bowl, combine the water with the bouillon. Sprinkle in the parsley and minced onion. Pour over the top of the turkey. Sprinkle seasoning salt over the turkey.
  4. Cover with foil, and bake in the preheated oven 3 1/2 to 4 hours, until the internal temperature of the turkey reaches 180 degrees F (80 degrees C). For the last 45 minutes or so, remove the foil so the turkey will brown nicely.
